Broccoli Soup

Description

Whenever you need something warming and hearty, this broccoli soup is an excellent choice.


Ingredients

Scale
  • 6 cups (1.5 litres) water
  • 1 onion (chopped)
  • 1 tsp garlic powder
  • 1 tsp ground coriander seeds
  • 1 sweet potato
  • 1 white potato
  • 1 big broccoli head
  • 3 big handfuls of spinach or chard
  • 1 big or 2 smaller carrots
  • salt or broth powder to taste

Instructions

  1. Put everything besides the broccoli and spinach into a large soup pot. Bring to boil. Cook covered for 8 minutes. Add broccoli. Cook for another 5 minutes, then add spinach and cook for 3 minutes.
  2. Blend the soup right in the pot with immersion blender – leave some chunks in.
  3. Season with sesame seeds, cayenne or black pepper, and fresh thyme.

  • Cook Time: 15 minutes
  • Method: Boiling
