Whenever you need something warming and hearty, this soup is an excellent choice.
6 cups (1.5 litres) water
1 onion (chopped)
1 tsp garlic powder
1 tsp ground coriander seeds
1 sweet potato
1 white potato
1 big broccoli head
3 big handfuls of spinach or chard
1 big or 2 smaller carrots
salt or broth powder to taste
Put everything besides the broccoli and spinach into a large soup pot. Bring to boil. Cook covered for 8 minutes. Add broccoli. Cook for another 5 minutes, then add spinach and cook for 3 minutes.
Blend the soup right in the pot with immersion blender – leave some chunks in.
Season with sesame seeds, cayenne or black pepper, and fresh thyme.
Have fermented buckwheat bread with hummus to make the dinner or lunch more nutritious.
You can also use broccoli stems – just peel them first.
