What to do with all that zucchini? 🍃
If you’re like many gardeners (or friends of gardeners), summer squash is everywhere right now — and this oven-baked zucchini is one of my favourite no-fuss ways to enjoy it.
✨ Here’s how I make it:
1. Slice zucchini and sprinkle lightly with salt
2. Let sit to release moisture
3. Pat dry with kitchen paper (if necessary)
4. Season with your favourite herbs/spices and a splash of balsamic vinegar
5. Bake at 180–200°C for ~35 min or until done
I used oregano, thyme, rosemary, and sage — but feel free to play around with what you have 🌿
These roasted zucchini slices are tender, flavourful, and so versatile — perfect as a side, salad topping, or part of a nourishing bowl.

It’s simpler than it sounds — and so worth it.
💡 Why soak and roast almonds?
✔️ Reduces phytic acid (which blocks mineral absorption)
✔️ Makes almonds easier to digest
✔️ Boosts flavour — less bitterness, more creaminess
In this video, I’m showing you how to make almond butter at home with activated almonds — smooth, creamy, and nourishing.
Most store-bought nut butters aren’t activated. And if they are? They can cost 70–134€/kg 😮
I make mine at home using organic raw almonds for just around 13€/kg — clean, cost-friendly, and deeply satisfying.
🛠️ Tools? I’m using my Vitamix here, but you can also make it with a regular food processor (just takes a bit more time and patience).
