What to do with all that zucchini? πŸƒ
If you’re like many gardeners (or friends of gardeners), summer squash is everywhere right now β€” and this oven-baked zucchini is one of my favourite no-fuss ways to enjoy it.

✨ Here’s how I make it:
1. Slice zucchini and sprinkle lightly with salt
2. Let sit to release moisture
3. Pat dry with kitchen paper (if necessary)
4. Season with your favourite herbs/spices and a splash of balsamic vinegar
5. Bake at 180–200Β°C for ~35 min or until done

I used oregano, thyme, rosemary, and sage β€” but feel free to play around with what you have 🌿

These roasted zucchini slices are tender, flavourful, and so versatile β€” perfect as a side, salad topping, or part of a nourishing bowl.

If you’re like many gardeners (or friends of gardeners), summer squash is everywhere right now β€” and this oven-baked zucchini is one of my favourite no-fuss ways to enjoy it.

✨ Here’s how I make it:
1. Slice zucchini and sprinkle lightly with salt
2. Let sit to release moisture
3. Pat dry with kitchen paper (if necessary)
4. Season with your favourite herbs/spices and a splash of balsamic vinegar
5. Bake at 180–200Β°C for ~35 min or until done

I used oregano, thyme, rosemary, and sage β€” but feel free to play around with what you have 🌿

These roasted zucchini slices are tender, flavourful, and so versatile β€” perfect as a side, salad topping, or part of a nourishing bowl.
